RAW CHOCOLATE AND COCONUT MOUSSE BY THERESE KERR
This is a healthy alternative to high sugar content desserts. We believe in the 80/20 rule so every now and then it is not only ok, but important to just spoil yourself and have a sweet treat, especially a healthy one like this. We have used agave syrup which contains fructose, but it is a healthy alternative to sugar and other sweeteners. You can also you use coconut sugar, coconut syrup (coconut syrup is a lower GI alternative) or you can also try Xylitol or Stevia.
What I love about this mousse is that it's so delicious. It feels like you're being a bit naughty, but really you're not because it's made with beautiful raw, nutrient-rich ingredients that are amazingly healthy for you.

Who would have thought you could make chocolate mousse out of avocado??
SERVES: 4 – 6
PREP TIME: 15 minutes
1 whole fresh young coconut (flesh and coconut water)
2 ripe avocados (diced)
2 tbsp coconut oil
1 tbsp chia seeds
¼ cup raw cocao powder (to taste)
½ cup dark agave syrup or raw honey (to taste)
1 tbsp coconut sugar
Juice of ½ lemon (optional)1 tbsp desiccated (shredded) coconut (for garnish)
Mint leaves (for garnish)
1. Place all ingredients except for the desiccated/shredded coconut in a food processor or blender and blend until smooth and creamy.
2. Place in a bowl or smaller serving container and cover and refrigerate for at least 1 hour to overnight to allow it to set.
3. Before serving garnish with desiccated (shredded) coconut and mint leaves.
